Easy Avocado and Tuna Salad

Hello boys and girls,

Just because I can, I shall share with you one of my most favorite concoctions. I love having this for lunch. Here goes:

Easy Avocado and Tuna Salad
(Makes 2 portions)

1 ripe avocado, chopped
1 roma tomato, chopped
1/2 jalapeño, chopped (you can remove the seeds if you want to tone down the heat)
cilantro, chopped (to taste)
juice of 1 lime
2 9oz cans of light chunk tuna, packed in water
salt to taste

Lightly toss the avocado, tomato, jalapeño, cilantro with the lime juice and salt. Top with the tuna. I like to eat it with 5 whole wheat crackers. I count them and put the box away so I won't keep eating those things.


*Note: The lime juice not only enhances the taste of the salad, but also helps avoid the oxydization of the avocado, so it doesn't turn black.
