Blueberry Protein Pancakes

My name is Belfebe, and I am addicted to pancakes. Like Stewie, I cannot resist a pile of hot, yummy pancakes, swimming in pancake syrup. In fact, were it not that IHOP pancakes are one of the unhealthiest meals in the world, I would get them from them every single morning.

Hence my obsession with collecting recipes for healthy protein pancakes. As a result, I have now a nifty collection of recipes, and they make the yummiest of breakfasts. Taking into account that blueberries this year have been particularly plump and fresh, I shall share with you my newest concoction:

(Makes 1 portion = 2 pancakes)

3 egg whites
1/3 cup of oatmeal (dry out of the container, unflavored -- I like rolled oats)
1/2 cup fat free cottage cheese
1 packet of Splenda
1/2 tsp. vanilla
1/4 tsp. cinnamon (optional)
1/4 cup blueberries
Non-stick spray
1/4 sugar free pancake syrup

Blend together the first six ingredients. Fold in the blueberries. Cook on a pre-heated pan, which has been sprayed with non-stick spray. Serve with sugar free pancake syrup.

what kind of oatmeal? prepared or dry-out-of-the-package?

Old Fashioned Quaker Oats or Quaker Steel Cut Oats - dry out of the container. Don't use the quick oats if you can avoid it.

Hi again! Just to clarify, you can use rolled oats (my fave), quick oats, or steel cut oats. As long as it is not the flavored instant oats you're good. I am posting an edit to the entry. :-)

Have you seen the caloric content in their food? It's online. Even their omelettes are a gazillion calories. Supposedly, they put batter on the mix, or so I have been told. Delicious food. I love it. I can hear my arteries clogging too. :-)

I <3 IHOP. I wish there was one here. There's only Waffle House. IMO, they're tons greasier!

But they get the best rock star fights. Kid Rock and Insane Clown Posse have gotten arrested ar Waffle Houses for fighting. I think it's hilarious. What do they put in those things?

I don't know! They're pancakes aren't as good either.

But I think that you're right -- one of the things that makes IHOPs calorie count so high is that they use Real Butter (tm).

It's not just that. It's the whole package. I love IHOP, but I don't go anymore. If I want to stay healthy, places like IHOP become a once or twice a year treat. Still enjoyable, but not my Sunday morning routine. :-)

nods and understandings. It's my "gone home and girls night out with Dru" treat. And since I only go home at the end of the semester, that's about right. If I ate there every Sunday, I'd weigh 400 pounds!
