In the meantime, as promised, here is the recipe for my favorite breakfast, peanut butter protein pancakes. Besides being totally delicious, it is the only way I can get myself to eat oatmeal. Yeah, it sounds rather weird but believe me, it rocks. I would also like to add that this recipe is from one of the issues of Oxygen magazine, which I swear by. I only added the sugar free syrup to it.
PEANUT BUTTER PROTEIN PANCAKES
(It makes two pancakes, which is one serving)
4 egg whites
1/3 cup oatmeal (plain)
1 tablespoon natural peanut butter, the kind you need to stir. If it says no need to stir, you don't want it.
1 packet Splenda
1/4 teaspoon cinnamon
1/4 cup of sugar-free pancake syrup (optional)
Mix it all in a bowl, except for the syrup. I mix it with an egg beater. If you have a problem with the consistency of oatmeal, do it in the blender. It's all the same. Cook it in a heated pan with non-stick spray, just like you would any other pancake. Add syrup and enjoy. It's addictive!
Nutritional Content: 286 calories, 9gr fat (but it's the good, cholesterol reducing fat), 0 gr cholesterol, 28 carbs, 2 gr sugars, 5 gr fiber, 24 gr. protein.
I live for this thing. I work out in the morning just to have this breakfast. Yum.
